Mushrooms
France was among the first countries to formally cultivate mushrooms, with some saying that
Louis XIV was among the first of the mushroom growers. It was not until the late 19th century
that mushroom production made its way to the United States. Today, mushrooms are grown
throughout the country, with Pennsylvania growing more than 40 percent of the nation’s
mushrooms. As mushrooms have grown in popularity, the number of varieties regularly available
in markets has increased. The white button mushroom now has many delectable companions.
